Pappardelle with Shrimp and Garlic

Ingredients:

  • 12 ounces pappardelle pasta
  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons olive oil, divided
  • 4 cloves garlic, thinly sliced
  • 1/2 teaspoon red pepper flakes (optional, for a bit of heat)
  • 1/2 cup dry white wine (such as Sauvignon Blanc)
  • 1 cup cherry tomatoes, halved
  • 1 lemon, zested and juiced
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste
  • Grated Parmesan cheese for serving (optional)

Instructions:

  1. Cook the Pasta:
  • Bring a large pot of salted water to a boil. Add the pappardelle and cook according to the package instructions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the pasta and set aside.
  1. Prepare the Shrimp:
  • While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the shrimp and season with salt and pepper. Cook until the shrimp are pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
  1. Sauté the Garlic:
  • In the same skillet, add the remaining 2 tablespoons of olive oil. Add the sliced garlic and red pepper flakes (if using). Sauté until the garlic is fragrant and just starting to turn golden, about 1-2 minutes.
  1. Add Wine and Tomatoes:
  • Add the white wine to the skillet, stirring to deglaze the pan and scrape up any browned bits. Let the wine simmer for about 2 minutes. Add the cherry tomatoes and cook until they start to soften, about 3-4 minutes.
  1. Combine Shrimp and Pasta:
  • Return the cooked shrimp to the skillet. Add the drained pasta and toss to combine. If the pasta seems dry, add some of the reserved pasta cooking water, a little at a time, until you reach your desired consistency.
  1. Finish the Dish:
  • Add the lemon zest, lemon juice, and chopped parsley to the skillet. Toss everything together to combine. Adjust seasoning with salt and pepper, to taste.
  1. Serve:
  • Divide the pappardelle and shrimp among serving plates. Sprinkle with grated Parmesan cheese, if desired, and serve immediately.

Tips:

  • Fresh Herbs: Fresh basil or thyme can also be added for extra flavor.
  • Vegetables: You can add other vegetables like spinach, asparagus, or zucchini for more color and nutrients.
  • Butter: For a richer sauce, add a tablespoon of butter when adding the shrimp back to the skillet.
